One of the most popular snacks prepared during Holi is the Gujiya. Gujiyas are known by various names in different parts of India - Ghughra in Gujarat, Karanji in Maharashtra, Karchikai in Tamil Nadu, Karjikai or Kadubu in Karnataka & Andhra. Gujiya / karanji (Holi Special) instructions

  1. Firstly, knead the maida flour with 1/4 cup of ghee and water nicely..
  2. Then keep it aside for 30 minutes..
  3. Then fry the desiccated coconut on a low flame for some time..
  4. After the desiccated coconut cools down, you can add almond, cashew, elaichi powder & Haggerty powder..
  5. Now you can make small shaped balls of kneaded maida flour & roll them out. Fill the inside with the mixture you have prepared..
  6. You can close the corners of the gujiya or karanji with a little water to make it damp..
  7. You can use a fancy cutter to give a nice shape to your gujiyas..
  8. Now, you take a Kadai or a frying pan. You can fry these gujiyas in any of the oils you prefer or ghee..

It's an indulgent dessert for special occasions! There are many ways of Making Gujiya/Gujia but I always love the sweet version. We Tamil People make a similar version of Gujia called Somas(sweet Somas) for. In Maharashtra, Gujiya is known as Karanji and the filling is different from the traditional Gujiya. Karanji has a coconut filling whereas Gujiya has khoya and dry fruits filling.
