- Sweat Onion, Carrott and Garlic.

- Take off heat - add nutmeg, salt & pepper and flour, this will form a thick paste.
- Add a small amount of milk and mix to dissolve the paste.
- Put back on a low heat, add more milk and mix! Do not leave it and keep scraping the bottom of the pan! Keep adding milk as it thickens..
- Add Cheese and mix - set aside.
- Now layer the lasagne: MINCE 1st, Pasta Sheets 2nd, Bechamel sauce 3rd, MINCE 4th, Pasta Sheets 5th, Bechamel Sauce 6th - Sprinkle with Parmesan cheese plus oregano.
