- Pour milk to a mixing bowl and add maida, fennel seeds and cardamom powder. Mix everything well and make a batter of flowing consistency..
- Whisk the batter for few minutes, if you prefer fluffy Malpuas..
- Keep the batter aside until sugar syrup is ready..
- Add sugar and water to a pot. Dissolve sugar on a medium flame. Boil the sugar syrup till it reaches 1 string consistency..
- Add 2 tsps lemon juice to the syrup so that sugar does not crystallizes. Turn off the flame..
- Now heat ghee for frying. When the ghee is hot, pour 2-3 tbsps of batter..
- Allow them to fry till golden brown, then flip and fry on the other side as well..
- Now remove them from the pan and directly add to the sugar syrup. Keep it for few minutes and then remove to a plate..
- Garnish malpuas with chopped pistachios. Delicious Malpuas are ready to serve!.
