Holi special Malpua instructions

  1. Pour milk to a mixing bowl and add maida, fennel seeds and cardamom powder. Mix everything well and make a batter of flowing consistency..
  2. Whisk the batter for few minutes, if you prefer fluffy Malpuas..
  3. Keep the batter aside until sugar syrup is ready..
  4. Add sugar and water to a pot. Dissolve sugar on a medium flame. Boil the sugar syrup till it reaches 1 string consistency..
  5. Add 2 tsps lemon juice to the syrup so that sugar does not crystallizes. Turn off the flame..
  6. Now heat ghee for frying. When the ghee is hot, pour 2-3 tbsps of batter..
  7. Allow them to fry till golden brown, then flip and fry on the other side as well..
  8. Now remove them from the pan and directly add to the sugar syrup. Keep it for few minutes and then remove to a plate..
  9. Garnish malpuas with chopped pistachios. Delicious Malpuas are ready to serve!.
